Ingredients

DUCKCHAR Moulard Duck Breast
Kosher salt
Pepper
1/2 red onion, diced
2 tablespoons basil, chopped
Corn tortillas
1 Lime

Cooking Directions

Step 1 - Remove skin from the duck breast. Simply pull it away. Then, score the skin on both sides. Cut up into smaller pieces and cook over medium heat in a large, heavy pan. Once the the skin is rendered into small, crispy golden pieces, set aside to cool. Save some of the rendered fat for crisping the tortillas.

Step 2 - Season DUCKCHAR Moulard Duck Breast with kosher salt and pepper and sear to desired doneness. Medium rare is our go-to doneness. Cook each side evenly (about 4 min per side) and pull at 131 degrees F (medium rare). Allow duck breast to rest for 10 minutes before chopping.

Step 3 - Brush tortillas with rendered duck fat and crisp in pan.

Step 4 - Make the tacos. Slice and chop the duck breast. Then top with red onion, basil, crispy duck skin pieces and a squeeze of lime juice. Serve and enjoy immediately!
