Ingredients

8 ounces DUCKCHAR Duck Bacon
Fresh bread (multigrain, sourdough, dealer's choice)
4 eggs
1 cup fresh Arugula

Cooking Directions

Step 1 - Place bacon slices in a cold pan. Heat duck bacon over low heat and turn over often so that each side is cooked evenly. We prefer our duck bacon with a very crispy finish. When it’s done, allow bacon to rest on paper towel lined baking sheet in order to drain the grease.

Step 2 -
While the bacon is cooking, get started with the soft boiled eggs. Bring water in a large pot to a gentle boil. Carefully place eggs in water with a slotted spoon. Maintain a gentle boil for 6 minutes. Transfer eggs to ice water bath for 2 minutes. Remove eggs from ice water and carefully remove shell beginning with the more rounded end.

Step 3 -
Make the tartine. Top bread with duck bacon, arugula, and soft boiled eggs (halved).
