Ingredients
4 ounces DUCKCHAR Duck Prosciutto, thinly sliced
4 ounces DUCKCHAR Duck Salami, thinly sliced
4 ounces DUCKCHAR Duck Pastrami, thinly sliced
4 ounces DUCKCHAR Smoked Duck Breast, thinly sliced
5 tablespoons olive tapenade
1 tablespoon pesto
4 ounces mozzarella, thinly sliced
2 cups fresh basil leaves, destemmed
2 tablespoons pine nuts or walnuts
2 large cloves garlic
1/2 cup olive oil
1/2 cup parmesan cheese, freshly grated
Kosher salt, to taste
Black pepper, to taste
Prepare Pesto
Step 1 - Finely mince basil, garlic and nuts in a food processor. Then slowly add olive oil, followed by the parmesan. Blend just enough to mix evenly. Set aside in refrigerator.
Assemble Sandwich
Step 2 - Brush one sandwich half with pesto and the other with plenty of tapenade.
Step 3 - Stack the sandwich in any order you prefer with the remaining ingredients. We make stack the sandwich in this order starting from the bottom: duck salami, mozzarella, smoked duck breast, duck prosciutto, duck pastrami.
Step 4 - Wrap the sandwich tightly with butcher paper and slice in half. Serve immediately or let it sit our for a bit before enjoying. It’s up to you.
