Ingredients

1 DUCKCHAR Moulard Duck Breast
3 tablespoons DUCKCHAR Duck Fat
Salt
Pepper
1 cup cilantro, chopped
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 red bell pepper, sliced
2 red onions, sliced
1 garlic clove, minced
1 jalapeno, thinly sliced
1 avocado, peeled and sliced
1 tablespoon cumin
2 teaspoons paprika
1 teaspoon, chili powder
1 tablespoon lime juice
Corn tortillas
Your favorite salsa

FAJITAS
Step 1 - In bowl, combine jalapeno, peppers, onion, garlic, paprika, cumin and chili powder in bowl. Salt and pepper to taste.  

Step 2 - Preheat cast iron skillet over medium high heat and add 3 tablespoons duck fat. Add bowl contents to skillet.

Step 3 - Cook fajitas veggies in skillet. After 5 minutes, reduce heat to medium. Cook for another 15 to 20 minutes. Stir often.

Step 4 - Brush corn tortillas with duck fat and heat in oven or on grill.

Step 5 - While in skillet, top vegetables with freshly pan seared slices of DUCKCHAR Moulard Duck Breast and fresh cilantro. 

Step 6 - Serve duck fajitas on tortillas with your favorite salsa, extra cilantro and avocado.
