Spicy Roasted Duck Fat Potatoes

Duck fat
Fresh cilantro
1 Jalapeno
2 LB Gold potatoes
Cooking Directions
Step 1 - Preheat oven to 450 F. Peel potatoes and place in large pot of water and bring to boil. Boil for 4 – 5 min.
Step 2 - Remove potatoes from water. Cut into 2 inch cubes. Toss with salt, pepper, rendered duck fat, jalapeno and cilantro.
Step 3 - Roast potatoes in oven for 20 minutes. Remove and mix gently with spoon. Roast 10 min more, then mix again. Return to oven for 10 more min.
Step 4 - Remove from oven. Mix gently with spoon. Garnish with freshly chopped cilantro and jalapeno. Enjoy.
