There are two reasons we roast chicken with duck fat. First, duck fat makes the skin crispier. That’s DUCKCHAR Duck Fat’s specialty. When a recipe calls for a crispy finish, choose duck fat as the cooking oil. Second, cooking chicken with duck fat enhances the flavor. Every delicious bite is even richer with duck fat. Ingredients
DUCKCHAR Duck Fat
Smoke Somethin’ Dry rub & Seasoning
1 Whole Chicken
Kosher salt
Cooking Directions
Step 1 - Preheat oven or pellet smoker to 375 degrees F. For this recipe, we roasted the chicken on our traeger grills pro 34. However, you can use any pellet smoker or oven for this dish. It will turn out great no matter what!
Step 2 - Brush chicken thoroughly with duck fat. Season to taste with Smoke Somethin’ Rub & Seasoning and kosher salt.
Step 3 - Place chicken in oven or pellet smoker. As the chicken roast, brush with DUCKCHAR Duck Fat every 20 minutes.
Step 4 - Once the roasted chicken’s internal temperature reaches 145 degrees F, brush with duck fat one last time. Next, increase heat to 425 degrees F to get a perfect crispy skin finish. The chicken is done once the breasts and area between the leg and thigh joint reaches a temperature of 165 degrees F.
Step 5 - Allow chicken to rest for 15 minutes. Serve and enjoy.
