How to Make Duck Fat Roast Potatoes

 
 

Ingredients

DUCKCHAR Duck Fat
Yellow potatoes
Salt
Pepper

Cut, boil, and season potatoes

Step 1 - Cut up potatoes to preferred size (not too small). We think the best potatoes for roasting in duck fat are yellow potatoes.

Note: if you want to make duck fat fingerling potatoes, go for it! Just be sure to reduce the times for each cooking step.

Step 2 - Boil potatoes for 7 minutes or until fork tender.

Step 3 - Toss potatoes with DUCKCHAR Duck Fat, salt and pepper. Ensure that all of the potatoes are evenly coated with duck fat.

Roast duck fat potatoes

Step 4 - Preheat oven to 425 degrees F. Line a baking sheet with parchment paper and add potatoes. Make sure there is ample space between each potato - at least 1.5 to 2 inches. Some assume that twice cooked duck fat potatoes is the best way to achieve a crispy finish. It’s not. Potatoes cooked in duck fat do not need to be cooked twice. Instead, pay attention to clutter. Spacing roasted potatoes properly is the most important step for duck fat roasted potatoes. Keeping some distance ensures they become crispy. Spacing potatoes too closely cause them to steam one ano another.

Step 5 - Roast potatoes with duck fat for 25 minutes. Then increase temperature to 500 degrees F and cook potatoes for another 5 - 10 minutes. That’s it.
