Ingredients

DUCKCHAR Duck Fat
DUCKCHAR Smoke Somethin’ Dry Rub & Seasoning
Kosher salt
Boneless Leg of Lamb

Cooking Directions

Step 1 - Brush leg of lamb with duck fat.

Step 2 - Season with thoroughly with kosher salt and Smoke Somethin’.

Step 3 - Tie lamb with twine to form a cylinder. This step is tricky. Take your time. It may take a few tries…

Step 4 - Preheat smoker to 250 degrees F.

Step 5 - Smoke leg of lamb until internal temperature reaches 120 degrees F. Brush leg of lamb with duck fat again and increase heat to 450 degrees F and cook until internal temperature of lamb reaches 140 degrees F.

Step 6 - Allow smoked leg of lamb to rest for 15 minutes before serving. Enjoy!
